Why Our Grain ?

We use many different grains, but the core “cereal”, as we call it, is wheat. Located in the “bread-basket” of France, the region called the Beauce, Viron Mills draws a great portion of its wheat supply from these densely fertile fields that one can admire from the soaring gothic towers of one of the world’s most celebrated cathedrals in the mill’s hometown of Chartres. From this “granary of France,” Viron mills chooses the varieties whose physical and chemical properties, including protein level and quality, are best suited to make aromatic and flavorful breads.
